Kanji or kana for quick notes?

When I am taking quick notes, like filling out a form or a shopping list, I get stuck. Is it better to use the complex symbols even if it is slow, or should I just use the simple phonetic script to stay fast? I want to build a daily habit, but I do not want to feel like I am in a maze every time I write. What do you do for speed?
