Writing fast: kanji or hiragana?

I've been practicing my writing and I am wondering about speed. When you are taking quick notes is it better to just write in hiragana? Sometimes writing complex kanji feels like it takes way too long but I don't want it to look weird. Is there a general feeling for when to make exceptions and skip the kanji?
