how to write without brain melting?

i want to practice writing japanese but it is so much. like do i have to memorize every single stroke for words like priest or quiet before i can even write a text? wait can i just write everything in english but use Japanese grammar? is that a thing? because trying to look up kanji makes me want to cry. how do people write diaries without spending 5 hours on one sentence idk maybe im doing this wrong
